Our green olives from Martirano Lombardo Calabria are picked and then de-fleshed with the aid of stones collected from the bottom of the sea.
After this procedure, the pitted olives are rinsed every day in fresh, clean mountain water until all bitter ingredients are removed from the fruits.
Following this process, the olives are drained and mixed together with fennel, oregano, garlic, chilli peppers and salt.
The mixture is then filled into jars and covered with seed oil to preserve them well for later.
They are a delicacy when consumed on bread and joined by an aperitif or mixed with fresh lettuce.
