Grown on farmlands in Santa Croce, our sin-ripe and flavorful tomatoes become delicious sauce.
We grow our organic San Marzano tomatoes on our farm in Santa Croce without using anychemical fertiliser. The sea breeze rising up the mountains uniquely seasons our tomatoes.
The sauce is based on handed down local recipes. We refrain from having our tomato produce being transported elsewhere for processing. Our key strength lies in Zero kilometers and a very low Carbon Footprint.
There are untold ways of enjoying our sieved tomatoes. Here in Calabria, it ismost common to prepare the tomatoes in a pan, letting them simmer for 20 minutes, then you enjoy them with spaghetti. They can also be eaten on warm bread topped with some oliveoil. Warm or cold, they are always delicious, and – not to forget – can be used to make a tasty tomato soup or gazpacho. And besides, after long hours or nights danced through, our tomato sauce makes a wonderful ingredient for a deserved Bloody Mary cocktail, either as aperitif oras sundowner.
We happily invite you to send in any further ideas of how to create more ways of using our sieved tomatoes.
Tasty and sweet, blended after a classic Calabrian recipe, our Limoncello is produced, of course, with zero kilometres and a negligible carbon footprint.
Our Limoncello liqueur is made of 100% homegrown Calabrian lemons. For our Limoncello, we ourselves pick and choose the organically grown lemons, which have been nurtured only bythe soils of Santa Croce and kissed by the Calabrian sun.
Our Limoncello’s ingredients are the peals of ripe aromatic lemons, alcohol, sugar and mountain spring water. The proof of the pudding is in the eating! Our Limoncello itself is a most interesting ingredient for many a dish: desserts grow on you with but a drop of Limoncello added. Added to Vodka, it revives the spirits.
One hundred percent of our extra-virgin olive oil is pressed from olive trees growing on our lands in Santa Croce. We use no additives, pesticides or chemical fertilisers.
Our olive tree groves are situated on our farm at the spur of the Monte Mancuso in SantaCroce. The trees are either of the Carolea, Leccino or Tondo della Calabria type.
We do not expose our trees to chemical fertiliser, since they and Mother Nature know best what is good for them – and we trust in Mother Nature to know best. Our only aid consists in providing the trees with a bit of lime and blue vitriol after the harvest. This helps the trees overcome the winter and it boosts their immune system, so that they recover their growth and strength well inspringtime.
The winds proceeding from the sea up to the mountains and back function as anatural insecticide, fungicide and moisturiser. This timelessly natural process is responsible for our olive oil’s distinctive taste.
The olives are harvested between October and December. Ideally the olives are picked when their green color is just turning to black, because then they are most tasty and carry the most oil and the least water content.
Olive oil is all about the process and the processing when pressing the fruit! We harvest the olives in the traditional local manner by beating the trees with bamboo rods. The olives are then immediately collected, sorted and then taken to a certified organic oil mill within 36 hours to be pressed unrefined. This procedure guarantees the natural and gentle processing for our home-grown olives.
Our green olives are hand-picked and then de-fleshed with the aid of stones collected from the bottom of the sea. After this procedure the pitted olives are rinsed everyday in fresh, clean mountain water to remove all bitter ingredients from the fruits. Following this process, the olives are drained and mixed together with fennel, oregano, garlic, chilli peppers and salt. The mixture is then filled into jars and covered with our extra-virgin olive oil. To preserve them well for later.
They are a delicacy when consumed on bread and joined by an aperitif or mixed with fresh lettuce.
